These sweet roasted chickpeas are a super easy 4-ingredient snack that’s vegan, gluten free and packed with nutrients. They’re the perfect healthy snack to have at hand when you’re craving something sweet, crunchy and homemade.
Preheat the oven to 400°F (200°C), or 360°F (180°C) fan. Drain and rinse the chickpeas. Spread them on a paper towel, cover with another paper towel, and rub gently until almost perfectly dry (see above for more detailed instructions).
Cover a baking sheet with parchment paper, and tip the dry chickpeas onto the baking sheet. Bake for 20 minutes.
Remove from the oven and toss with the coconut oil, maple syrup and ground cinnamon. Bake for 10 minutes. Remove from the oven and give it a thorough stir.
Put back in the oven, and bake for another 10 minutes. Turn the oven off, crack the door open, and leave the chickpeas inside while the oven cools off. These are best freshly baked and cool.
