Creamy, rich and filling, this vegan broccoli soup is everything you would expect from a hearty winter meal that warms you up and leaves you feeling satisfied for hours. It’s made with seven simple, whole food ingredients that provide a healthy dose of nutrients and flavour.
Heat olive oil in a large saucepan, add onion and garlic, and sauté until tender.
Mix in potato, broccoli, vegetable stock and coconut milk. Bring to a boil, reduce heat, and simmer for 15 minutes, until vegetables are tender. You should be able to easily pierce potato with a fork.
Transfer the soup to a blender, or simply use an immersion blender, to puree until smooth. Return to the saucepan if using a standard blender, and quickly bring to a boil one more time. Serve warm, with a slice of crusty bread.
