These homemade peanut butter cups are a healthier alternative to the traditional peanut butter and chocolate candy. The recipe is made with three simple ingredients for a treat you can feel slightly less guilty about.
Melt the chocolate either on the stove or in the microwave.
In a medium bowl, stir peanut butter with agave syrup until smooth.
Spread about 1 teaspoon of melted chocolate up the sides of mini cupcake liners. Place them in the freezer for 5 to 10 minutes for the chocolate to harden.
Once the chocolate has hardened, remove the cups from the freezer. Using a small cookie scoop or spoon, place approximately 1 teaspoon of peanut butter in each liner. Gently spread peanut butter over the chocolate base.
Place 1 to 2 teaspoons of the remaining melted chocolate over the peanut butter middle. Spread evenly using a spoon.
Place the peanut butter cups back in the freezer for 5 to 10 minutes to harden completely.
Remove from paper liners and store in the fridge for up to 4 days.
