Preheat the oven to 220°C (425°F). Peel the sweet potato and cut it into fry-shaped pieces, approximately ¼ to ½ inch thick. Try to cut it into similarly sized pieces, so they can bake evenly.
Toss the fries into a mixing bowl or a plastic bag, and sprinkle them with cornstarch. Make sure they're evenly coated, and remove any excess cornstarch.
Pour in a teaspoon (or more) of olive oil, to lightly coat the fries. Season with salt and spices of your choice.
Spread the fries on a non-stick baking sheet (or lined with baking paper). Arrange them in a single layer, ensuring they're not overcrowded (see pictures).
Bake for 15 minutes, then flip the fries so they can cook on all sides. Bake for 10 to 15 minutes more, or until the fries are crispy.
You’ll know they’re done when the surface of the fries changes from bright orange to a slightly warmer tone, and the edges start to turn dark brown. Serve right away.
