Healthy Vegan Apple Pie Pancakes

If you love waking up to the smell of freshly baked pie, these healthier apple pie pancakes can turn even the most random morning into a holiday. You can have them ready in just 15 minutes, with only seven basic ingredients.

ingredients
 

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¾ cup plant-based milk
  • ¼ cup applesauce
  • ¼ cup chopped pecans
  • ½ apple, diced - (Honeycrisp and Gala work best)

  • In a large mixing bowl, combine flour, baking powder, and cinnamon. Add almond milk and applesauce. Mix until fully combined.
  • Let the batter sit for a few minutes. In the meantime, grease a non-stick pan with a teaspoon of coconut oil, and preheat it over medium low heat.
  • Add chopped pecans and apple to the batter and stir well.
  • Once hot, reduce heat to low, then pour about 2 tablespoons of the batter at a time in the pan and cook for about 1 to 2 minutes per side, until the surface starts to bubble. Flip it over and cook for another minute or so, until golden brown.
  • Repeat until you've used up all the batter. Serve right away, or store in an airtight container in the fridge.
