In a large mixing bowl, combine flour, baking powder, and cinnamon. Add almond milk and applesauce. Mix until fully combined.
Let the batter sit for a few minutes. In the meantime, grease a non-stick pan with a teaspoon of coconut oil, and preheat it over medium low heat.
Add chopped pecans and apple to the batter and stir well.
Once hot, reduce heat to low, then pour about 2 tablespoons of the batter at a time in the pan and cook for about 1 to 2 minutes per side, until the surface starts to bubble. Flip it over and cook for another minute or so, until golden brown.
Repeat until you've used up all the batter. Serve right away, or store in an airtight container in the fridge.
