Basic Peanut Butter Overnight Oats

Sweet, creamy and filling, these basic peanut butter overnight oats are the perfect choice for busy weekday mornings. You can have them ready in under 10 minutes, and store in the fridge for days.

ingredients
 

  • cup plant-based milk (I used almond milk)
  • 1 tablespoon maple syrup
  • 1 tablespoon peanut butter
  • 1 tablespoon chia seeds
  • ½ cup rolled oats

instructions
 

  • Add almond milk, maple syrup, peanut butter and chia seeds in a blender.
  • Blend for 30 to 60 seconds, until chia seeds are completely blended.
  • Stir in rolled oats and pulse for 5 seconds, just enough so that they break apart a little, but still retain their grainy texture.
  • Pour into a jar, close the lid and let it sit in the refrigerator over night, or for at least 8 hours.
