This chickpea spinach pizza with juicy vine tomatoes is not your average homemade pizza. If you’re looking to switch up pizza night, give this healthier, crunchier, vegan version a try.
Transfer rolled out pizza dough to a parchment paper lined pizza pan and either pinch the edges or fold them over to form a crust.
To make the sauce, mix all the sauce ingredients in a bowl with a whisk.
Spread the sauce, saving 3-4 tablespoons, on the pizza crust and put the pizza in the oven for 10 minutes.
Meanwhile, heat 1 tablespoon of oil in a skillet, add the reserved sauce and the chickpeas and cook for 3-5 minutes over medium heat.
Remove the pizza from the oven. Then, spread the chickpea mixture and the vegan cheese onto the pizza, along with spinach, vine tomatoes and any other veggies of your choice.
Put it back into the oven for another 10-15 minutes until the edges are crispy.
