Vegan Make-Ahead Chia Oats

These quick and easy make-ahead chia oats are the perfect breakfast for your busy mornings. You can have them ready in under 10 minutes, and leave them in the fridge for up to three days.

ingredients
 

  • β…“ cup quick oats
  • 1 teaspoon chia seeds
  • 1 tablespoon desiccated coconut
  • ΒΌ cup plant-based milk (I used almond milk)
  • β…” cup water
  • 1 tablespoon blueberries, - fresh or frozen

instructions
 

  • Mix all the ingredients in a large microwaveable bowl. Stir well.
  • Microwave on high for 2 minutes. Stir well and microwave for another 30 seconds. Stir again and microwave for another 30 seconds.
  • Transfer the oats into a sealed container or glass jar, and let them sit in the refrigerator for at least 3 hours, but preferably overnight.
  • Stir, add your favourite toppings, and dig in!
