    Vegan Chocolate Loaf Cake with Orange

    If you’re a fan of orange flavoured dark chocolate, you’re bound to love this easy vegan chocolate loaf cake. It’s dense and moist and perfectly sweet with a light citrusy touch that makes it the ideal dessert for cold winter nights and summer picnics alike.

    This simple chocolaty dessert doesn’t just look amazing and taste absolutely divine, but it’s much healthier than it looks, too. Made with carefully selected ingredients, this chocolate cake is:

    • Vegan
    • Refined sugar free
    • Under 200 calories per piece

    How to Make Chocolate Loaf Cake

    1. In a medium mixing bowl, whisk together the cocoa and boiling water until smooth.

    2. Allow to cool to room temperature, then slowly whisk in vanilla, flaxseed, orange juice and maple syrup. In a large mixing bowl, combine flour, baking powder, salt and orange zest.

    3. Add half of the chocolate mixture and coconut oil to the flour mixture. Mix on low with a handheld or a stand mixer until the dry ingredients are moistened. Scrape down the sides.

    4. Gradually add in the remaining chocolate mixture in two batches, mixing with a spatula.

    5. Scrape the batter into the prepared pan and smooth the surface with a spatula. Sprinkle the top with chocolate chips.

    6. Bake for 50 minutes, then cool completely before slicing it.

    Make Chocolate Muffins Instead!

    You can actually use this same recipe to make chocolate muffins. Here’s all you need to know:

    • As written, the recipe makes 6 muffins.
    • Bake them for 20 to 25 minutes, or until a toothpick inserted in the centre comes out clean.
    • If you’re using a non-stick muffin tin, you don’t have to grease it at all. Otherwise, grease it lightly with coconut oil.
    • Fill the muffin cups all the way to the top. They won’t overflow.

    How Long Does This Vegan Chocolate Loaf Keep?

    When stored in an airtight container, it will last for 3 days at room temperature and approximately 1 week in the fridge.

    Does It Freeze?

    Yes, to freeze it, place the cake in an airtight container, either as a whole load or individual slices. It will stay fresh for up to 2 months.

    Ingredients

    • 3 tablespoons + 1 ½ teaspoons (20g) unprocessed cocoa powder
    • 3 tablespoons boiling water
    • 1 ½ teaspoon vanilla extract
    • 3 tablespoons flax meal (ground flax seeds)
    • 9 tablespoons orange juice
    • ⅓ cup (120g) maple syrup
    • 1 ¼ cup (125g) all-purpose flour
    • ¾ teaspoons baking powder
    • Pinch of salt
    • Zest from 1 orange
    • ½ cup (90g) coconut oil
    • ¼ cup (45g) chocolate chips, optional

    Instructions
     

    • Preheat the oven to 350°F (175°C).
    • Grease a 8×4-inch loaf pan lightly with coconut oil, and line it with parchment paper so that the paper is hanging over the sides of the pan.
    • In a medium mixing bowl, whisk together the cocoa and boiling water until smooth.
    • Allow to cool to room temperature, then slowly whisk in vanilla, flaxseed, orange juice and maple syrup.
    • In a large mixing bowl, combine flour, baking powder, salt and orange zest.
    • Add half of the chocolate mixture and coconut oil to the flour mixture. Mix on low with a handheld or a stand mixer until the dry ingredients are moistened. Scrape down the sides.
    • Gradually add in the remaining chocolate mixture in two batches, mixing with a spatula.
    • Scrape the batter into the prepared pan and smooth the surface with a spatula. Sprinkle the top with chocolate chips. This is optional, but highly recommended.
    • Bake for 50 minutes or until a toothpick inserted in the centre comes out clean.
    • Let the cake cool in the pan on a wire rack for 10 minutes. Then, gently lift the cake out of the pan using the edges of the parchment paper and transfer onto the wire rack. Reinvert it so that the top is up, and cool completely before slicing it.
    • This cake is best when served at room temperature.
