    Sweet potatoes are one of those foods that you either hate or love. I love them because they’re cheap, tastier and healthier then regular potatoes. Okay, so I might be slightly biased with the tastier bit, but thee’s no arguing that they’re a healthier alternative. Did you know that one medium sweet potato counts towards one of your five-a-day, whereas a white potato doesn’t?

    How To Make the Best Fries

    The best sweet potato fries are crunchy on the outside, and still soft and sweet on the inside. So here are my top tips for how to get that effect at home, without drowning your fries in oil:

    • Lightly coat them in cornstarch and olive oil before baking. This creates a thin crust that makes your fries even crunchier.
    • Place them far apart and turn them regularly to prevent your fries from getting soggy while baking in the oven. If you cram all the sweet potato sticks together on one baking sheet, this creates an atmosphere similar to steaming, which results in potatoes that seem more cooked than baked, let alone fried.
    • Bake them until they seem almost burnt. This one seems pretty obvious, but the longer you bake them, the crunchier the potatoes will be. Don’t be afraid if the edges turn slightly black; this is what gives the fries that nice caramelised taste.
    • Serve right away, because the longer sweet potato fries sit out in the open, the soggier they will get. All potato fries taste best straight from the oven, when they’re still hot and crispy.

    Ingredients

    • 1 medium sweet potato
    • 1 teaspoon cornstarch
    • 1 teaspoon olive oil
    • 1 teaspoon salt
    • ½ teaspoon paprika

    Instructions
     

    • Preheat the oven to 220°C (425°F). Peel the sweet potato and cut it into fry-shaped pieces, approximately ¼ to ½ inch thick. Try to cut it into similarly sized pieces, so they can bake evenly.
    • Toss the fries into a mixing bowl or a plastic bag, and sprinkle them with cornstarch. Make sure they’re evenly coated, and remove any excess cornstarch.
    • Pour in a teaspoon (or more) of olive oil, to lightly coat the fries. Season with salt and spices of your choice.
    • Spread the fries on a non-stick baking sheet (or lined with baking paper). Arrange them in a single layer, ensuring they’re not overcrowded (see pictures).
    • Bake for 15 minutes, then flip the fries so they can cook on all sides. Bake for 10 to 15 minutes more, or until the fries are crispy.
    • You’ll know they’re done when the surface of the fries changes from bright orange to a slightly warmer tone, and the edges start to turn dark brown. Serve right away.
