    When it comes to indulgent breakfasts, nothing beats a tall stack of homemade pancakes made from scratch.     These apple pancakes are perfect for when youโ€™re craving a dessert before 9am. They smell and taste like apple pie, but will totally pass as breakfast.

    These eggless pancakes are easy to make, and even though they taste like apple pie, they only call for a handful of easy-to-find ingredients:

    • Flour โ€“ nothing too fancy; just plain, all-purpose flour for this recipe.
    • Baking powder โ€“ acts as a rising agent and makes the pancakes thick and fluffy.
    • Almond milk โ€“ to make these pancakes vegan-friendly, but you can use any milk you want.
    • Apples โ€“ pieces of fresh apple make these pancakes taste like the real deal.
    • Applesauce โ€“ for extra apple flavour in every single bite.
    • Pecans โ€“ for a crunchier texture and a fuller flavour.
    • Cinnamon โ€“ makes your kitchen smell like Christmas every time.

    How to Make Vegan Pancakes with Applesauce

    Step One โ€“ Mix the Batter

    Combine flour, baking powder, and cinnamon in a large bowl. Add almond milk and applesauce. Mix until fully combined.

    Step Two โ€“ Add Pecans and Apple Chunks

    Let the batter sit for a few minutes. In the meantime, grease a non-stick pan with a teaspoon of coconut oil, and preheat it over medium low heat. Add chopped pecans and apple to the batter and stir well.

    Step Three โ€“ Cook

    Once hot, reduce heat to low, then pour about 2 tablespoons of the batter at a time in the pan and cook for about 1 to 2 minutes per side, until the surface starts to bubble. Flip it over and cook for another minute or so, until golden brown.

    Repeat until youโ€™ve used up all the batter. Serve right away, or store in an airtight container in the fridge.

    Are These Vegan Apple Pancakes Really Healthy?

    It would be hard to argue that pancakes can ever be as healthy as aย green smoothieย or aย vitamin-packed salad, but for a sweet and tasty treat, these pancakes are pretty healthy. Theyโ€™re madeย without any refined sugar,ย sweetened naturallyย with only applesauce, theyโ€™reย dairy free,ย egg freeย and cooked with aย minimum amount of coconut oil.

    Which Apples Should I Use?

    You can use any apple variety youโ€™d like in these apple pancakes! For sweeter pancakes, use Honeycrisp or Gala apples, and if you prefer something a little less sweet, go with Granny Smith.

    Can I Substitute Any of the Ingredients?

    While Iโ€™m usually quite open to experiments, in this case I wouldnโ€™t advise you to change too much. Iโ€™ve tried making them with oat flour, but sadly it resulted in pancakes that fell apart the minute I tried flipping them. Whatever you do, do not change the liquid to flour ratio.

    You can, however, easily play around with the amount of pecans and cinnamon. Add more or less, according to your preferences, and sweeten the batter to your own liking.

    Can I Eat These Apple Pancakes Cold?

    You can, and I have. Like all pancakes, theyโ€™re best freshly baked, but you can easily store them in an airtight container in the fridge and eat them later on. I can guarantee they last for at least a day, and you can even heat them up in the microwave for a more freshly baked vibe before digging in.
