Vegan Pulled Pork Sandwiches

- 1 tablespoon olive oil
- 1 medium onion, sliced
- 2-3 cloves garlic, minced
- 1 can jackfruit in water or brine (220g drained)
- 1 teaspoon salt
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ½ teaspoon paprika
- ½ teaspoon liquid smoke
- 1 cup vegetable stock
- ¼ cup vegan BBQ sauce
- To serve: sauerkraut, coleslaw, mayo, mustard, ketchup, burger buns
Drain and rinse the jackfruit, then pat it dry.
Heat the oil over medium heat.
Add the onions, and cook until translucent. Add garlic and cook for another minute. Make sure it doesn't burn.
Add the jackfruit, spices, and liquid smoke. Stir to coat evenly.
Add the vegetable stock and bring to a simmer. Reduce heat, cover and simmer for 30 minutes, until the liquid is mostly absorbed.
Meanwhile, preheat your oven to 350ºF (180ºC).
Spread the jackfruit on a prepared baking sheet. Bake for 60 minutes, until the liquid has baked out.

Pour the BBQ sauce over the jackfruit. Mix and return to the oven for 15 minutes.
