Vegan Pulled Pork Sandwiches

These vegan pulled pork sandwiches are the perfect plant-based option for anyone craving pulled pork. Featuring jackfruit crisped to perfection and then smothered with BBQ sauce, these sandwiches taste smoky and savoury, with a texture that does not disappoint.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 2-3 cloves garlic, minced
  • 1 can jackfruit in water or brine (220g drained)
  • 1 teaspoon salt
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon liquid smoke
  • 1 cup vegetable stock
  • ¼ cup vegan BBQ sauce
  • To serve: sauerkraut, coleslaw, mayo, mustard, ketchup, burger buns

Instructions

  • Drain and rinse the jackfruit, then pat it dry.
  • Heat the oil over medium heat.
  • Add the onions, and cook until translucent. Add garlic and cook for another minute. Make sure it doesn't burn.
  • Add the jackfruit, spices, and liquid smoke. Stir to coat evenly.
  • Add the vegetable stock and bring to a simmer. Reduce heat, cover and simmer for 30 minutes, until the liquid is mostly absorbed.
  • Meanwhile, preheat your oven to 350ºF (180ºC).
  • Spread the jackfruit on a prepared baking sheet. Bake for 60 minutes, until the liquid has baked out.

  • Pour the BBQ sauce over the jackfruit. Mix and return to the oven for 15 minutes.
