This easy pasta with cherry tomato sauce is a simple weeknight dish that anyone can make in less than 30 minutes. It calls for only a handful of fresh ingredients that make it perfect for warm summer evenings when you're craving a lighter meal.

Ingredients

  • 1 ½ cup dry pasta of your choice
  • Pinch of salt
  • 1 tablespoon olive oil
  • ½ medium onion, chopped
  • 2 cloves garlic, minced
  • 1 ¼ cup cherry tomatoes, halved
  • Pinch of black pepper
  • 1 teaspoon dried oregano

Instructions

  • Cook the pasta according to package instructions.
  • Heat olive oil in a large saucepan over low heat. Add onion and garlic, and slowly caramelise the onion.
  • Add cherry tomatoes and cook on low heat for about 10 minutes. Some of the tomatoes should start to fall apart, with a few larger chunks remaining. Season with black pepper and oregano.
  • Transfer the cooked pasta into the pot and give it a good stir. Serve right away.
