- 1 ½ cup dry pasta of your choice
- Pinch of salt
- 1 tablespoon olive oil
- ½ medium onion, chopped
- 2 cloves garlic, minced
- 1 ¼ cup cherry tomatoes, halved
- Pinch of black pepper
- 1 teaspoon dried oregano
Cook the pasta according to package instructions.
Heat olive oil in a large saucepan over low heat. Add onion and garlic, and slowly caramelise the onion.
Add cherry tomatoes and cook on low heat for about 10 minutes. Some of the tomatoes should start to fall apart, with a few larger chunks remaining. Season with black pepper and oregano.
Transfer the cooked pasta into the pot and give it a good stir. Serve right away.
