Creamy Raw Vegan Cashew Dip

ingredients
 

  • ½ cup cashews, soaked*
  • 1 clove garlic
  • cup milk**
  • ¼ cup cheese***
  • 1 teaspoon mustard
  • ½ teaspoon salt

instructions
 

  • Place soaked cashews in the bowl of a food processor or blender with the garlic, milk, cheese, mustard and salt.
  • Puree until perfectly smooth and creamy. Store in fridge for 3-4 days, or freeze.

notes

*Soak the cashews in water for at least 3 hours and up to 12. Place the cashews in a bowl and cover with water by an inch, then cover with plastic foil and put in the refrigerator if soaking overnight. After soaking, discard the liquid and rinse thoroughly.
To quickly soak the cashews, place your cashews into a pot, cover with water, and bring to a boil. Once the water is boiling, remove from heat and cover. Let that sit for about 15 minutes. You can read more about how to soak cashews here.

***To make it vegan, use vegan cheese of your choice
