  • 120 g all-purpose flour
  • 1 teaspoon baking powder
  • 50 g sugar
  • 1 egg
  • 50 g almond milk
  • 1 teaspoon vanilla
  • 100 g berries fresh or frozen and defrosted


  1. Preheat the oven to 180°C and line a 4 x 10″ tin with baking paper.

  2. In a large bowl, mix the flour, baking powder and sugar. In a medium bowl, beat the egg with milk and vanilla.

  3. Pour the liquid into the dry ingredients and mix well. Gently fold in the berries.

  4. Pour the batter into the prepared tin and bake for 25 to 30 minutes, until a toothpick inserted in the middle comes out clean.

  5. Transfer the bread onto a cooling rack and let it chill to room temperature. Store in an airtight container for up to 3 days.
